Fresh of course! Ask the other guys what they use. Don't be surprised to find out that there fish was previously frozen or gas treated. It also make a big difference where you buy your fish from. Hanapa'a Sushi Co. gets our fish from the same place Hawaii's top sushi bars get theirs from too.
